Smoked Salmon and Spinach Scrambled
Scrambled eggs are my go to eggy breakfast mainly because I find them the easiest eggs to make and they take no time at all. Here’s a quick and easy recipe that’s healthy, easy and most importantly tasty.
- 1 egg
- 1 egg white
- 1 slice or approx. 20g smoked salmon roughly chopped
- A handful approx. 10g spinach
Whisk together the egg and egg white in a jug than pour into a non-stick saucepan and place on the hob on the lowest heat setting.
Add the salmon and spinach and continuously stir until you get scrambled egg consistency, take off the heat just before your eggs are done to your liking as they will continue to cook in the saucepan once taken off the heat.
Serve on their own or with your favourite toasted bread, muffin or bagel.
