Cauliflower, Broccoli and Mustard Soup
In the winter especially I love a warming bowl of soup for lunch or dinner. This bowl of yum will fill you up and using milk instead of cream helps to keep this nice and healthy.

- 1tbsp olive oil
- 1 clove garlic
- 75g Broccoli
- 75g Cauliflower
- 200ml veg stock
- ½ a large potato
- 1 tsp mustard
- 50ml of semi skimmed milk
- Salt and pepper to taste
Heat the olive oil in a medium saucepan, add the onion and garlic and sauté until soft (approx 5-10 mins)
Then add the broccoli. cauliflower, potato, stock and mustard to the saucepan and cook on a medium heat for 25 minutes until soft.
Once cooked blend all the ingredients, I use my Magic Bullet usually in 2 parts, or you can use a blender.
Then pour the soup into a saucepan and add the milk and salt and pepper, cook on a medium heat for 5 minutes and then serve….today I served mine with homemade soda bread – my go to quick and easy bread of choice!
